Ingredients for the dough:

  • 400 g flour;
  • 200 g of butter;
  • A couple of pinches of salt;
  • 10-12 tbsp. ice water.

Ingredients for the filling:

  • 400-450 g pitted cherries. If you take out a pit, be careful — we need a whole beautiful cherry. Both frozen and fresh cherries will do the thing. In the case of frozen cherries, remove it from the freezer in advance so that it has time to completely thaw and become a room temperature. Save the juice!
  • 100-150 ml of cherry juice;
  • 170-200 g of sugar;
  • 3 tbsp cornstarch;
  • 2 tsp of cinnamon;
  • 1/2 tsp ground cardamom;
  • 1/2 tsp ground ginger;
  • 1 scrambled egg with 1 tsp water for greasing.

How to cook Cheery Cherry Pie

  1. Put water in the freezer;
  2. Place the flour in a large bowl or sprinkle over a large cutting board;
  3. Salt the flour and add the cold diced butter. I also put a knife in the fridge in advance to quickly cut the butter. Mix the butter with the flour and chop with knives or fork. You’ll need a medium-sized crumbCheery Cherry Pie
  4. When the mixture is done, make a hole in it and pour the icy water. Knead like a regular dough. No need to stretch. In the end, you’ll need a ball-shaped dough. Ingredients must be cold. For more confidence from time to time I place my hands under cold running water;
  5. Divide the dough somewhere 60/40 (bottom and lid). Roll out a larger piece so that it becomes a little bigger than your baking pan. Spread the dough over the pan, adjusting it with your fingers. Cover with a plastic film and put into the fridge for half an hour;Cheery Cherry Pie
  6. Take the pan out and pierce the dough with a fork. We do this to prevent hot steam from inflating the dough. The second piece of dough is still in the fridge;
  7. Cover the bottom with baking paper and pour a thick layer of beans. Put the pan into a 200 C oven for 15 minutes;

  8. Remove the load and bake for another 10 minutes to dry the bottom;
  9. Remove the pan and let rest and cool for 10 minutes;
  10. Drain the cherries from the juice. In a suitable saucepan, mix the cherries with sugar, starch, and spices. Pour the juice. Gently stir;

  11. Put on a medium heat and cook for 5 minutes, stirring to dissolve the sugar;

  12. Let the cherries rest for 5 minutes and gently pour on the cake, distributing the berries;

  13. While the cherries cool, roll out the dough and cut it into strips. Spread the strips over the cake, pressing a little. I made the edges to remove the bumps. Grease the strips with egg and water, avoiding the filling;

  14. Bake for 20-25 minutes;

Replacements:

  • You can take a ready-made dough from a supermarket. I tried to bake the cake this way and it turned out great;
  • Cherries can be replaced by blueberries, currants and other favorite berries with a sour tint;
  • Part of the cherry juice or the whole juice can be changed to red dry wine or accompanied with brandy. It will be even more intense;
  • Cornstarch can be replaced with potato starch.
