You can still get Mimiron’s head in a retail version of the game. There have already been multiple examples of mounts tied to Feats of Strength being removed from the game once the powercreep rendered it obsolete. Mimiron’s head managed to avoid such a tragic fate, but to compensate for the lack of difficulty, you only have a 1% chance to get it now.
Interestingly, it doesn’t drop from the boss the head belongs to. Instead, you get it for defeating Ulduar’s final boss, the insanity-inducing Yogg-Saron, in a 25-person version of the raid. But remember that while you have to defeat Mimiron, the mount itself drops from the Hogg-Saron, rather than Mimiron’s automaton.
